something nice back home // white chicken chili

confession: i'm a hoarder of flowers. i love love love fresh flowers. everytime i head into the grocery store, i cannot resist buying the prettiest flowers i can find. they make my heart happy! ;)


these beauties have been in my kitchen for over 3 weeks. i keep changing the water and cutting the ends to preserve their life... i just don't want to let them go!


another confession? i hate leftovers. blech. i always make just the right amount of food so i don't have to stare at a tupperware container in my fridge for a week. let's be honest, it's more like 2 weeks.

the other day i made white chicken chili in the crockpot. it was deeeeelicious! so savory, so much flavor! but alas - there were leftovers! 

 

so, i did what i normally did - put them in a tupperware container and pushed them to the back of the fridge. hmph. what a disappointment. 

the next day for lunch, i had bought organic, all natural whole wheat flour tortillas, and was having a major craving for a sandwich or quesadilla made with these fabulous tortillas.

that's when it happened! the light bulb went off. 

i warmed up the leftover "chili" on the stove and stuffed a tortilla with it. i warmed up and toasted the tortilla in the oven and it came out even more amazing than the previous night. mmm, mmmmm, mmmm.

weigh-in...


jumped on the scale this afternoon for our weekly weigh-in. 

literally. i jumped. 

i felt like i hadn't been doing so great this past week - that stinky self doubt struck again. 

 *whew*

7.4lbs down!

yay!

creamy casseroles?! // creamy burrito casserole


truth be told, when i first wrote the title for this entry, i was a bit skeptical. after completing my recipe (successfully!) for creamy burrito casserole, i was in heaven. 

delicious? yes. easy? yes. creamy? YES. 

have you ever had a casserole that was creamy?! oh my. it's quite habit forming.

i know, i know. you're skeptical. but trust me! *wink*


CREAMY BURRITO CASSEROLE

serves: 4
*everything i could have made myself, i did.
*all ingredients are organic and not processed.

the goods: 
1lb ground turkey or chicken
1/2 medium yellow onion, chopped
2.5 Tablespoons taco seasoning (make your own! so much healthier.)
5-6 whole wheat tortillas (repeat! make your own! so much healthier.)
2 cups refried beans (repeat! make your own! so much healthier.)
2 cups shredded cheddar cheese
6 large tomatoes, peeled and diced
1/2 cup sour cream
1/4 teaspoon salt
1/2 teaspoon cumin

how-to:
{preheat oven to 350}
-cook tomatoes down to a sauce. add a pinch of salt.
-brown ground turkey/chicken and onion. add seasoning.
-stir in refried beans. combine. 
-mix sour cream with tomato sauce. add 1/2 teaspoon cumin. 
-spread half of sour cream mix into bottom of casserole pan.
-tear up tortillas and layer half over sour cream mix. 
-spread half of meat and bean mix onto tortillas. 
-add half of cheese. add hot sauce if you so desire. 
-repeat layers. sour cream mix, tortillas, bean/meat mix.
-sprinkle remaining cheese over top. 
-bake for 25 to 30 minutes. enjoy! 

optional toppings: 
sour cream, diced tomatoes, green onions, cilantro


i seriously hope you enjoy this as much as we have! the hubs is on his second helping. mmmmm!

pin-spiration :)

first, let me confirm the fact that I am addicted to Pinterest. I love love love it!

since going on this huge lifestyle change I've had to realize... I have a lot of recipes on Pinterest. bread, chicken, desserts... oh my! after doing some research tonight, I've realized how bad a lot of these recipes are for me. no canned or frozen ingredients, and definitely nothing I can't pronounce!

so, I've had to do the inevitable... go through 700+ recipes and delete the ones that are bad for me. ughhhh. do I have to? that's quite a lot of recipes to go through!

the good news? I've found some amazing recipes that I cannot wait to try!

healthy is as healthy does!

resolution vs. revolution


you probably have been seeing so many social media posts regarding "new years resolutions"... at least I know I have! and I am sick of looking at them all.

lets be honest for a second.

we all have issues or problems with ourselves that we - or others! - would like to change. sometimes others may not even see what you're trying to change, and thats okay. because its all about YOU.

revolution: a sudden, complete or marked change in something; "the present revolution in church architecture."

resolution: the mental state or quality of being resolved or resolute; firmness of purpose.

my change isn't about what others see in me or what I feel others need to see. plain and simple, it's about me. a complete lifestyle change.

it's no surprise that I've gained a lot of weight. the majority of this weight gain is a combination of anti-depressants and hormonal changes.

my personal growth story won't be shared here today, but I can promise you that it will be shared eventually. It's a very hard and emotional story, as most write it off to being non-existent, but its very real and very existent in my current life still.

I've been reading a lot and doing a lot of research as to healthy living. do you want low carb? low calorie? vegan? paleo? ughhhh. so many ideas out there that it's hard to figure out what you want verses what is good for your body. I went with both. I want a full lifestyle change. no processed foods, lots of vegetables, and most importantly lots of nutrients.

I don't want to consider this a resolution because a resolution already sounds complete; finished. I want a revolution... an uprising. something to tell not only myself but my body as well that times are changing and I am not going to stop until its complete.

so heres my plan: watch my calories; exercise more; no processed foods; and most importantly drink more water. I'm all about what my body needs and how I need to get back down to the basics. rid my body of the unnecessary ingredients I've put into it for so long.

for now, it's all I can do to apologize for mistreating my body so poorly. I hope it forgives me, it's in for a lot of changes!
